This year it seems that the crawfish farmers will not be able to supply enough crawfish to meet demand. It will be impossible to buy big bags of crayfish but the fish will be available in small quantities. The crawfish pulling season, when the process of harvesting the crawfish from the breeding ponds starts, usually starts after Thanksgiving. This year has had a very slow harvesting start and as the weather is getting colder it will be harder to harvest good quality fish. One of the reasons for the limited amount of crayfish that is available and the slow crawfish season of this year is the fact that many crawfish farmers are still struggling to restock their ponds after the hurricane season in 2005.
